5-day maceration to extract fruit and spices without moving the grapes. Wild yeast fermentation. Low temperature fermentation (24-26°C) with minimal intervention on the wine. 4 to 5 months in old French barrels to add length and complexity to the wine.
The nose presents a mixture of fresh red berries, mint and violets. This wine best expresses the liveliness of cabernet franc, ripe and fresh. The palate shows plenty of acidity which gives length to the wine and balances the sweetness and fulness of the fruit.
