Vinification: Long, cool controlled fermentation using a dedicated aromatic yeast to enhance bouquet and citrus characters.

Fermentation was arrested early for a lower alcohol, off-dry wine.

Appearance: Pale lemon

Bouquet: Citrus notes of ripe lemon on the nose, white orange blossom, and soft florals with highlights of juicy mandarin in the background.

Palate: The palate is fresh and inviting, rich and rounded with fragrant ripe limes and lemon zest.

Cellaring: Enjoy now (probably best to wait till you are home) and over the next 3-5 years.

Serving Temperature: Best served at 8-12ºC
